Its deep bleu d’argile, the local blue clay, is shot through with limestone rock, and the combination tends to give textbook Chablis: mineral, taut and long rather than broad. The domaine, run by Virginie Moreau at Chablis, works 0.65 hectares across the lieux-dits Les Monts Mains, Les Bouts des Butteaux and Vaux Miolot. The last of those lies on deeper clay, is difficult to work, and brings additional flesh and texture to the blend. For this release the wine was fermented and aged without any oak at all, a decision made to keep freshness to the fore, so the depth of the site reaches the glass unmediated.
