Moreau-Naudet works vines planted in 1974 in Les Epinottes, a cooler part of the vineyard, and in Roncières, which brings more flesh, while a parcel of 75-year-old vines in Sécher usually accounts for about 30% of the blend and provides mineral cut and structure. Each parcel is vinified separately before assemblage, and the wine ferments and ages in both tank and older barrels, so oak plays a supporting role only. The domaine hand-harvests, uses natural yeasts and matures its wines unhurriedly.
