The domaine farms vines planted in 1974 in Les Epinottes, a cooler section, and in Roncières, which gives more flesh, while a parcel of 75-year-old vines in Sécher usually accounts for around 30% of the blend and supplies mineral cut and structure. Each parcel is fermented separately before assemblage, in a combination of stainless steel tank and older barrels including some 600-litre casks, so the wine picks up texture without oak flavour.
