Moreau-Naudet’s village bottling comes chiefly from 20- to 30-year-old vineyards at Préhy and Courgis, south of Chablis, with further parcels in Chablis itself and at Chichée, beneath the premier cru vines of Vaugiraut and Vosgros. The domaine works around 30 parcels in total, covering a range of soil structures and exposures, and the fruit from its youngest vines is sold off in bulk, which lifts the general standard of what remains. Pressing is gentle and runs over four hours, and fermentation is with natural yeasts, still a rarity in Chablis. The wine is raised mainly in tank and matures unhurriedly.
