Moreau-Naudet’s village bottling comes chiefly from 20- to 30-year-old vines at Préhy and Courgis, south of the town, with further parcels in Chablis itself and at Chichée, below the Premier Cru vines of Vaugiraut and Vosgros. Across the appellation the domaine works some 30 parcels covering a range of soil structures and exposures, and all the fruit from its youngest vines is sold off in bulk rather than blended in, which lifts the general standard. Pressing is gentle, over four hours, and fermentation runs on natural yeasts, still a rarity in Chablis. The wine is raised mainly in tank and the maturation is unhurried. It is sealed with Diam.\u003c\/p\u003e\n\u003cp\u003eDrinking now and over the next five years.
