This bottling is the exception that proves the point. The 2.5-hectare parcel lies between Courgis and Beine, just outside Chablis on the road to Auxerre, with a south-westerly orientation and Kimmeridgian soils. Half the plot carries vines of 25 to 30 years, the remainder 45 to 50. The wine ferments spontaneously in large vats of 32 to 100 hectolitres, with no oak involved, and is bottled under Diam closure.
