Selected fruit goes into French oak to build a structured red for the cellar.\u003c\/p\u003e\n\u003cp\u003eFragrant and savoury, with a firm frame. Give it an hour or so in a decanter, then serve at 16–18°C with roast lamb, duck or aged hard cheeses.
