It keeps higher acidity than Chardonnay and gives a leaner, more citric wine. Pillot's holding is split between Chassagne and the Chalonnaise to the south. The grapes were crushed and pressed, then fermented spontaneously, and the wine aged on its lees, without stirring, in a combination of stainless-steel tank and older oak barrels. Leaving the lees undisturbed builds a little texture without softening the line of acidity, and the absence of new wood keeps the wine direct.\u003c\/p\u003e\n\u003cp\u003eBest drunk over the next three or four years.
