Pillot's well-situated 0.6-hectare parcel lies on a hillside outside Chassagne, facing northeast, an aspect that slows ripening and holds acidity; the vines are now 35 years old. The grapes are hand-picked, pressed and left to settle, then fermented naturally and kept on lees for 12 months in small stainless-steel vats and older barrels. There is no new oak, so the wine keeps a direct line, with ripe lemon and nectarine fruit and a briny, tangy close.
