The Pillot family have been in Chassagne since the mid-nineteenth century; Paul added the premier cru holdings from 1968, and his son Thierry, who joined in 1999 and took charge in 2007, now farms about thirteen hectares with his sister Chrystelle, organically but without certification. Thierry trains the vines higher to increase leaf surface and de-leafs selectively to balance shade against air movement. From 2011 he lengthened the élevage and reduced the oak across the range, using larger barrels of 350 to 500 litres with a low proportion of new wood and finishing the wines with a spell in stainless steel before bottling.
