Pillot is a Chassagne domaine best known for its whites, and Thierry Pillot has built a following for reds made with the same care. The two sites sit on the classic clay and limestone of the Côte, with vines averaging 35 years of age. Fruit is hand-picked and mostly destemmed, though roughly 20 to 30 per cent whole bunches are retained for structure and perfume, an unusual proportion at this level.
