The estate's holding is in the heart of the original enclosure, where stone walls still ring the vines. Soils here are rich in clay and the oldest vines are now more than eighty years of age, a combination that gives the whites noticeable texture and depth rather than pure raciness. Fruit is hand-picked and whole-bunch pressed, fermented with indigenous yeasts and aged on lees in barrel with only a small share of new wood.
