The Pillot parcel lies in the heart of the original clos, the 2.2-hectare section traditionally called Chassagne du Clos Saint-Jean. At just over a hectare, the family's holding is the largest in that section and is split evenly between Pinot Noir and Chardonnay. The vines are worked by hand, including tressage, where the shoots are arched over rather than hedged. This cuvée was fermented with a high proportion of whole bunches and pigéage was done by foot over about ten days, which gives a perfumed, finely structured red rather than a broad one.\u003c\/p\u003e\n\u003cp\u003eDrink from now to fifteen years.
