The Pillot holdings total 0.49 hectares and the vines average 55 years of age. Winemaking follows the same line as the domaine's other premiers crus, with hand harvesting, whole-bunch pressing, natural fermentation and ageing on lees in barrel; in some seasons no new oak is used at all. The stony soil shows in the glass as an intense, chalky and earthy minerality alongside real textural power, a combination that is uncommon even among premier cru whites.
