Pillot farms 0.26 hectares at the very top of the hill, where the topsoil is so thin that much of the land cannot be planted at all. Few growers work here, with Ramonet holding more than half the vineyard, which is why the name is less familiar than its quality warrants. Winemaking is as for the other premiers crus: hand-picking, whole-bunch pressing, natural fermentation and lees ageing in barrel with restrained new oak.
