Pillot farms a 0.94-hectare parcel in Les Grandes Terres, where vines of more than fifty years give small crops of concentrated fruit. Harvesting is by hand. Around 30 per cent of the bunches go into the fermenter whole, which lifts the perfume and adds a layer of fine tannin, and the wine is raised in barrel with a light hand on new oak.
