This wine comes from a single 0.94-hectare block of Pinot Noir over 50 years old in Les Grandes Terres, on exactly that ground. Paul Pillot, run by Thierry and Chrystelle Pillot, is one of the few Chassagne estates to keep red in the range at serious quality. Fermentation used 25 per cent whole bunches, which brings perfume and a layer of fine tannin, and the wine was raised in Burgundian barrels with restraint. It is layered and complex without being heavy, and it represents unusually good value from the Côte d'Or.\u003c\/p\u003e\n\u003cp\u003eEnjoyable young and worth eight to ten years in the cellar.
