Some growers label the wine under the easier-to-pronounce climat name of Les Combes. Pillot farms half a hectare here, with vines approaching their sixtieth harvest. The domaine's method is consistent across the range: hand-picking, natural fermentation, ageing on lees in barrel with restrained new oak.
