Vines there average thirty-five years, and the whole estate is certified organic, with controlled grass cover and hard pruning. Fruit is destemmed, fermented with wild yeasts, then aged about a year in French oak of which roughly a quarter is new.\u003c\/p\u003e\u003cp\u003eExpect dark cherry and wild strawberry dusted with stone and spice, held together by firm but polished tannin.
