Close to half the planting dates from the 1930s, and about thirty per cent of the crop goes into the vat as whole bunches before a slow, wild fermentation and ten to twelve months in French oak. Bottled in magnum, the wine ages more slowly again.\u003c\/p\u003e\u003cp\u003eDepth is the point here: black cherry, iron, dried herbs and a long mineral close, with tannin that asks for patience.
