Fruit for this cuvée comes from roughly six and a half hectares of Pinot Noir averaging fifty years of age, one parcel sitting right beside the Aux Guettes premier cru. The bunches are destemmed, fermented on ambient yeasts over a fortnight and raised ten to twelve months in used barrels.\u003c\/p\u003e\u003cp\u003eRed cherry and raspberry lead, with a savoury, faintly earthy edge and fine chalky tannin behind them.
