Botrytised berries are selected individually across seven or more pickings, and the vineyard gives one to two hectolitres per hectare in the years the wine is made at all. Fermentation ended with 150 grams per litre of residual sugar. Long, slow ageing in the cool tuffeau galleries beneath the slope has carried the wine well past the point where sweetness dominates, leaving Chenin Blanc's acidity and the noble rot character to do the work.
