In years when botrytis settles cleanly on the Chenin Blanc, individual shrivelled berries are picked out by hand over seven or more separate passes through the vineyard, a trie de grains nobles in the strictest sense. Yields fall to one or two hectolitres per hectare, which is why the wine appears so rarely. This bottling finished with 298 grams per litre of residual sugar, a concentration closer to essence than to conventional dessert wine, held in balance by Chenin Blanc's naturally high acidity.

Extraordinarily concentrated and best poured in very small measures, it works with Roquefort or foie gras but is really a wine to drink on its own; serve at around 10 degrees.

*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
