Gaillard draws on the schist soils of Fongeant and Viallière at Ampuis, together with a parcel on gneiss at Semons in the south of the appellation. The whole crop is picked by hand with a strict selection of bunches and berries. The fruit is completely destemmed and given a five-day pre-fermentation soak, then worked with regular punch-downs. Ageing runs to eighteen months in barrique, 35% of it new, and the wine is bottled without filtration.
