The vines are well over sixty years old, which is what the vieilles vignes designation refers to, and the three plots are co-vinified rather than blended after ageing. François Labet, who also runs Château de la Tour in Clos de Vougeot, is a committed user of whole bunches, and 45 per cent of the fruit went into the vats uncrushed. The wine was matured in 25 per cent new oak barrels, giving a classically structured Gevrey with fine, mineral-edged tannins and a concentrated dark-cherry finish.\u003c\/p\u003e\n\u003cp\u003eApproachable from three or four years and good for a dozen.
