The Plageoles family has spent decades rescuing them, and Mauzac Roux is one of seven distinct Mauzacs they farm. The grapes are picked in three passes through the vines, and in strong botrytis years roughly half the crop comes from botrytis-affected fruit; whatever the conditions, yields sit around 25 hectolitres per hectare of fragrant golden juice. At 80 g\/L residual sugar this is the driest of the estate's sweet wines and the only one fermented and matured exclusively in cement tanks, with no oak at all. Farming is organic.
