These wines are the ancestors of today's pét-nats, and the Plageoles Mauzac Nature is the reference example. The fruit comes from a forty-year-old organically farmed parcel of Mauzac Rose, an exceptionally rare strain of the local variety. The naturally fermented base wine is chilled to arrest fermentation while 25 to 30 grams per litre of sugar remain; the following spring it is bottled and the fermentation resumes under cork to create the bubbles. Nothing else is added and no dosage is needed, as the second fermentation stops naturally with a touch of sugar left.
