The original clos, widely regarded as the heart of the appellation, gives a different and more powerful wine than the land added around it. Domaine Ponsot holds most of that original core, with vines averaging around sixty-five years, and its remaining rows lie in Monts Luisants, higher up the slope on the same soil, which contributes freshness to the density of the fruit below. The domaine picks late, ferments with indigenous yeasts and uses no new oak, so the concentration comes from vine age, plant material and farming rather than from the cellar.
