The vineyard is a Ponsot monopole high on the slope. Small quantities of Chardonnay and Pinot Gouges, a white mutation of Pinot Noir, have appeared in the blend at various points in its history, but from 2004 the wine returned to its origins as pure Aligoté, drawn mostly from a selection of vines planted in 1911. Since 2015 a parcel of younger fruit has made up about 15 per cent of the blend, bringing the average age down to roughly 90 years. The grapes are pressed in the domaine's vertical press, fermented in both tank and barrel, and aged in wholly neutral barriques between 10 and 60 years old.\u003c\/p\u003e\n\u003cp\u003eA wine to cellar: give it five years and expect it to run for twenty.
