The vineyard once carried small amounts of Chardonnay and Pinot Gouges, a white mutation of Pinot Noir, but from 2004 the wine returned to pure Aligoté, drawn largely from vines planted in 1911. The Vieilles Vignes designation records those ancient plants; since 2015 a parcel of younger fruit has made up about 20% of the blend, bringing the average vine age to roughly 90 years. Grapes go into the domaine's pneumatic press, then ferment in a mix of tank and barrel before ageing in wholly neutral oak, with barriques between 10 and 60 years old.
