Domaine Schoffit is based in Colmar, where Bernard Schoffit built the estate on parcels in the Harth, a warm, stony, free-draining terrace on the plain east of the town, before adding the steep volcanic Rangen at Thann. The old Chasselas vines here are picked ripe, pressed gently and fermented dry in tank without oak, which keeps the grape's soft texture and low acidity intact. Residual sugar is negligible, under four grams per litre.
