Domaine Schoffit farms the Clos Saint-Théobald, the lower part of the cru, and has worked it for several decades, farming the vineyard organically. On this ground Gewurztraminer loses the blowsiness it can show elsewhere, the volcanic rock lending a smoky, almost salty grip that cuts against the grape's natural breadth.
