Domaine Schoffit, based in Colmar, farms a parcel here known as the Clos Saint Theobald, terraced because no machine can work the slope. Vendanges Tardives is a legally defined Alsace category rather than a house term: the fruit must be hand picked at a high minimum must weight, chaptalisation is banned and the wine is held back before release.
