Pinot Gris is one of the four noble grapes permitted under grand cru rules and it takes particularly well to this ground, gaining weight and a smoky, gunflint edge the variety rarely shows elsewhere. Schoffit farms the Clos Saint Theobald within the cru, hand working terraces no machine can reach and picking late to gain ripeness.
