Riesling carries a lower sugar threshold than Gewurztraminer or Pinot Gris but is the hardest of the noble grapes to ripen that far, so late harvest bottlings appear only in the warmest seasons. The fruit comes from Schoffit's Clos Saint Theobald on Rangen, the steep volcanic cru above Thann whose dark rock ripens fruit while the site's exposure and the river air hold acidity, and the terraces there are worked entirely by hand.
