Daniel Ravier now looks after 38 certified organic hectares, split across parcels between the water and the steep hills behind. Older vines supply the fruit, which is taken by saignée and direct pressing, fermented on native yeast and left a short while on fine lees.\u003c\/p\u003e\n\u003cp\u003eWhite peach, wild strawberry and grapefruit skin come through first, with thyme and sea spray behind and enough structure to sit beside a main course.
