Les Saumonts abuts Les Puillets but faces a little further south, sitting high on the hillside between 300 and 325 metres and surrounded by forest, in the north-western corner of the commune. The soils below the hilltop are reddish clay and limestone dotted with small fossils, red terroir turned to white wine. Domaine Theulot-Juillot works around eleven hectares in the village and Nathalie Theulot makes the wines. The massale-selection vines here were planted in 1998, and the wine is raised in one-third new oak barrels. It carries more body than the domaine's Les Champs Martin blanc while keeping the same tight weave of texture and linear freshness.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and worth holding five to seven years.
