That geology is why the wine is consistently the tautest and most mineral of the Meursault crus, and why many growers argue it deserves Grand Cru rank. Vincent Dancer, an engineer by training, took over family parcels in 1996 at twenty-two and built his cellar the year after; the domaine runs to around six hectares across Chassagne, Puligny, Meursault, Pommard and Beaune, and his son Théo now handles the day-to-day. He was the first grower in Chassagne to certify organic, in 2012, having farmed that way since 2006, and works the premier cru rows with a horse. In the cellar there is spontaneous fermentation with no additions, no bâtonnage, used barrels with little or no new wood, and bottling without fining or filtration.\u003c\/p\u003e\n\u003cp\u003eBest given four or five years, with a decade or more ahead of it.
