Viognier is the only grape allowed in the appellation, and slopes this steep mean all the work is by hand. Since taking over the family vines in the late 1980s, he has become one of its leading names, with holdings in its best sites. Ripe grapes go into the press as whole bunches, ferment on wild yeasts in barrel and are then aged on stirred lees with modest new oak.\u003c\/p\u003e\n\u003cp\u003eRich and perfumed, yet dry, with apricot weight held by a firm line.
