Fruit was picked by hand and foot-stomped during a wild fermentation that ran three months on skins, far longer than a conventional red ferment, which builds tannin slowly instead of extracting it hard. It was then basket-pressed into a mix of seasoned barriques, demi-muids and amphora, then racked once and bottled with barely any sulphur. Nothing was added along the way. Margaret River Cabernet with this little winemaking on it is rare.\u003c\/p\u003e\n\u003cp\u003eBlackcurrant and bay, with an iron-and-graphite savouriness and a long, dry tannin finish that has softened with a few years in bottle. Serve at 17 degrees, decanted.
