The hand-picked fruit was foot-stomped, then wild fermented in open vessels and held six weeks on skins to build depth and detail. Basket pressing sent it to seasoned French barriques, where it was left alone: racked once, sulphured only at bottling, with no additives, no fining and no filtration. What lands in the glass is the vineyard with very little between.\u003c\/p\u003e\n\u003cp\u003eSavoury and textural, with mulberry and cassis, a dusting of dried herb, and structure that feels confident without being heavy. Serve at 16 to 18 degrees after a decant.
