The fruit was destemmed into stainless steel and left three months on skins, a long stretch for Chardonnay, and the reason this wine has grip where most Margaret River Chardonnay has oak. It was basket-pressed, given a short stay in seasoned wood, then racked, blended and bottled in December. Jo Perry has worked this way for over a decade, and the wines have never relied on new barrels to make their point.\u003c\/p\u003e\n\u003cp\u003eExpect dried pear, quince and a nutty, lees-driven texture, with a fine phenolic tug on a dry finish. Serve at 12 degrees, not colder.
