That filtered light protects the bunches through a hot Margaret River summer and lets flavour build slowly. Grapes were hand harvested and whole-bunch pressed into a mix of amphora, puncheon and barrel, then left there until blending and bottling. Chenin is a variety Western Australia has quietly been good at for decades, usually in the Swan Valley, and this is a cooler, coastal reading of it.\u003c\/p\u003e\n\u003cp\u003eQuince, green apple and a dab of honey over a firm, dry line of acidity, with texture from the time in clay and wood.
