Fruit came from the Yungarra site, where gravelly, loamy, limestone-rich soils and well-established vines have settled into a rhythm under Jo and Jim's management. It was hand harvested, destemmed into amphora, and plunged by hand until the cap dropped. Four months later it was basket-pressed straight back into the same vessel, rested another month, and was then bottled by hand directly from the pot. Clay adds texture without adding flavour, which is why Cabernet grown this well can stand it.\u003c\/p\u003e\n\u003cp\u003eThe fruit reads darker and more mineral than an oaked Cabernet, with blackcurrant, wet stone and a little dried thyme, and tannin that is chalky and fine. Serve at 16 to 17 degrees.
