Hand-harvested Chenin from the Yungarra vineyard was destemmed straight into amphora and left to ferment naturally on its skins for a month, then pressed off and returned to the same clay to settle before bottling. Fermenting on skins is what gives a white wine tannin and a savoury cast, and a month is enough to get that without tipping into heaviness. There is no oak, no filtration and no additions beyond a minimum of sulphur, the point being to see what the site does on its own.\u003c\/p\u003e\n\u003cp\u003eBright and youthful, with green apple, poached quince and a lick of orange peel, finishing dry with a light skin-derived grip. Serve at 11 to 12 degrees.
