Chenin Blanc holds acidity better than almost any white variety, and that is what lets a wine like this take lees ageing without turning soft. Everything is done by hand and in small volume, as it is across the range.\u003c\/p\u003e\n\u003cp\u003eLees time shows up as texture instead of richness, over lemon, nashi pear and a faint honeyed note, with a dry, saline finish. Serve at 10 to 11 degrees.
