This Chenin was picked by hand, destemmed, and fermented on skins in a concrete egg with one plunge a day. Once malolactic finished, the basket press moved it to a second egg for three months before hand bottling.\u003c\/p\u003e\n\u003cp\u003eSkin contact gives a savoury edge to what is otherwise a generous wine: baked apple, beeswax and citrus peel, with a firm dry finish. Serve at 11 to 12 degrees.
