Large, seasoned wood at that size gives a slow, gentle maturation without any oak flavour. Jo Perry describes Cupid as something of an accident, in the best sense, a wine shaped by decisions made as it went along, leaning into structure and quiet complexity while keeping its freshness intact.\u003c\/p\u003e\n\u003cp\u003eFull of nuance without any heaviness: lemon curd, dried apple, a waxy texture and a dry, faintly bitter close. Serve at 11 degrees.
