It is picked by hand and pressed as whole bunches to tank for a cool fermentation, then hand bottled with a touch of sugar still to go and sealed, so the fizz builds in bottle. That is the whole method, with no disgorging, no dosage and no filtration. It is the loudest and most cheerful wine in the range.\u003c\/p\u003e\n\u003cp\u003eCloudy, dry and lightly frothing, with pear, lemon and a yeasty bite. Get it properly cold, 6 degrees, and open it slowly.
