Underneath sit sandy soils with pea gravel down to seven or ten metres, then porous coffee rock and ironstone at about twenty-five. Sea air and that free-draining profile keep the variety from turning tropical. Fruit was hand harvested, destemmed into amphora, and fermented and rested there on skins for five months before being basket pressed to tank and bottled after a short settle.\u003c\/p\u003e\n\u003cp\u003eFive months on skins turns Sauvignon Blanc into something else: grapefruit pith, dried herbs, nettle and a savoury, mouth-gripping finish. Serve at 12 degrees in a wine glass.
